Modifier une activité commerciale

## Rôle

Patch partiel d'une activité OUVERTE (réassignation comprise) - la clôture passe par transition_sales_activity.

## Accès

Scope principal : `sales_activities:write`. Le scope ne remplace pas les gardes de visibilité, d'organisation, de module ni les scopes complémentaires des gestes composés.
